All seafood has “shun”, the best season. At “Ginza Kobikicho, AOMORI Sushi”, we make sure to prepare sushi with high-quality shun seafood.
The most famous brand of tuna in Aomori is the “Oma no hon-maguro (Pacific Bluefin Tuna of Oma)” and the shun is between September to December.

About Ginza Kobikicho

The area around the Kabukiza theater is now known as Higashi Ginza and Ginza. It was called “Kobikicho” in the Edo period. It was named after “Kobiki Shokunin (Kobiki artisans)”. These artisans lived in this area to reconstruct the Edo castle. There were many sushi stalls here, since sushi was considered as a fast food in Edo period.
The history and culture of Edo style nigiri sushi goes back 150 years. We still enjoy the Edomae sushi and there are more sushi restaurants in this area than any other part of Japan. “Ginza Kobikicho AOMORI Sushi” opened the restaurant here, in this area, which is referred to as the sacred place of Edomae sushi, bringing its original style of Nigiri sushi.
