Aomori is surrounded by sea. Pacific Ocean to the east, Sea of Japan to the west, and Tsugaru Strait to the north.
The inland sea, Mutsu Bay is called the fourth sea of Aomori. Because these bodies of water carries both warm and cold current, Aomori is blessed every season, with abundance of high-quality seafood.

All seafood has “shun”, the best season. At “Ginza, AOMORI Sushi”, we make sure to prepare sushi with high-quality shun seafood.
The most famous brand of tuna in Aomori is the “Oma no hon-maguro (Pacific Bluefin Tuna of Oma)” and the shun is between September to December.
Shun, for tuna fished out of the coastal waters are, pacific bluefin tuna in winter, bigeye tuna from spring to summer, best time to enjoy the fatty meat.
Because the nation’s coastal line stretches from north to south, shun for wild-caught seafood’s will vary depending on the region.
We select the best seafood of the shun in order to prepare the highest quality sushi.

About Ginza Kobikicho

The area around the Kabukiza theater is now known as Higashi Ginza and Ginza. It was called “Kobikicho” in the Edo period. It was named after “Kobiki Shokunin (Kobiki artisans)”. These artisans lived in this area to reconstruct the Edo castle. There were many sushi stalls here, since sushi was considered as a fast food in Edo period.
The history and culture of Edo style nigiri sushi goes back 150 years. We still enjoy the Edomae sushi and there are more sushi restaurants in this area than any other part of Japan. “Ginza AOMORI Sushi” opened the restaurant here, in this area, which is referred to as the sacred place of Edomae sushi, bringing its original style of Nigiri sushi.
